They are largely affected by the place, water, feeding methods etc. For example, many people think that oysters in the United States are fresher and those in France taste heavy. There are currently more than 200 regions around the world that produce different flavors of oysters. France

France is the largest oyster production area over the world, oysters could be traced back to Roman times. The Oyster Festival is held every year in mid-July in some of cities with major fisheries in France.

Australia

The best growing season of Australian oysters is in summer and autumn. Now, we come to Sydney rock oyster, which has a strong taste like liquor. The strong mineral flavor burns into the mouth and leaves a bit of an after taste for a long time. Instead, Coffin Bay oysters are refreshing, with a taste of salt water and seaweed.

America

Generally speaking, coastline of the U. S. is long that produces hundreds of species of oysters, salty, heavy or fresh. The taste of American oysters is more like in the middle between the strong taste of Australian oysters and the light taste of Canadian oysters. When spring comes, American oysters lay their eggs, which made them taste like the flavor of cream.

The most exquisite way of eating oysters in Seattle is to sprinkle the salt called “Bride’s salt” and drop some lemon juice on the oysters, then put one into the mouth with the water in its shell, the natural flavor of the ingredient is boosting. Oysters are popular in United States, August 5th is their National Oyster Day. Besides, there are other various oyster festivals in different areas,such as the St. Mary’s Oyster Festival in California and Maryland, which have formed the distinctive American oyster culture.

Kumamoto oysters look small, but their flavor is excellent and fresh! The picture below is one of  oyster creative dishes. Cool watermelon balls and cucumber puree on the top of Kumamoto oysters became a perfect combination. New Zealand
New Zealand, near Antarctica, the purest country in the world. Blaff oysters naturally grow for 4-8 years at depths of 60 meters near the south pole. It is known as the most delicious oysters in the world with its large size, rich and juicy flavor. It was also described as the “Pacific Caviar”for its rarity. Bluff holds Oyster Festival every year in their harvest season, featuring championships of eating oysters. This annual festival celebrates the harvest of gorgeous oysters, which made this  southernmost town in New Zealand famous.

Ireland

In Ireland, Galway oysters have a history of more than 60 years, with an annual sales of 2 million. Irish rock oysters are bred in the traditional way, which taste slightly sweet when it melt into the mouth. It is salty, strong mineral flavor and juicy, it is recommended to have with wine. As everyone knows, Galway International Oyster & Seafood Festival, which began in 1945, is the longest running Oyster Festival in the world. It is an annual four day event held each year on the last weekend of September in the centre of Galway City.
